Makes: 12 baskets Prep and Cooking: 30-40 minutes
Ingredients:
- 3 medium sized sweet potatoes
- 100-150g kale (or any leafy greens)
- 200g mushrooms
From the cupboard:
- cooking oil
- Paprika
- Rosemary
- Dried garlic
- Soy sauce
Method:
- Slice thinly the sweet potatoes. Place in a bowl and season with salt, paprika, rosemary and dried garlic. Add a bit of cooking oil and mix.
- Place the slices in a muffin tin arranging them in a fanlike shape. Don’t forget to grease the tin.
- Bake for about 30-40 minutes (until golden brown)
- Meanwhile chop the kale and mushrooms and stir fry with a bit of soy sauce.
- When the baskets are ready fill them with a spoon full of the kale and mushrooms mixture.
