Summer Gratin with Courgettes

Serves: 4
Prep: 40 – 50 mins

Ingredients:

  • 300g-400g courgettes
  • 200-250g carrots
  • 3 cloves of garlic
  • a handful of dill

From the fridge and cupboard

  • 100ml whole milk
  • 100ml double cream
  • 100g grated mild cheddar
  • 2 eggs
  • paprika
  • turmeric
  • salt

Method:

  • Preheat the oven to 180°C.
  • Grate the courgettes and carrots (in two separate bowls).
  • Salt the courgettes and leave for 2-3 mins. Squeeze the water out.
  • Mix the courgettes, carrots and crushed garlic into a frying pan with cooking oil, salt, paprika and turmeric. Stir for 2 mins.
  • Place the vegetables on a baking tray.
  • Beat the milk, cream and eggs together and our over the vegetables.
  • Bake until golden (30-40 mins).
  • Sprinkle the cheddar on top when you switch the oven off, and leave the dish in there until the cheese melts.
