Summer Couscous Salad

Serves: 4 as a main, or 6 as a side
Prep and Cook: 15 – 20 mins

Ingredients:

  • 250g-300g courgettes
  • 200g carrots
  • 100g kale (about 8 stalks)
  • onion (spring or white)
  • a handful of parsley
  • olives (optional)
  • roasted sunflower seeds (optional)

For the dressing

  • 10 tablespoons olive oil
  • the juice of 1 lemon
  • salt to taste

Method:

  • Grate the courgettes and carrots. Squeeze out the water from the courgettes.
  • Finely chop the kale and knead it with a bit of salt.
  • Mix all the vegetables and olives and seeds if using.
  • Mix well with the dressing.
  • Serve on a bed of salad leaves.

This salad goes well with chicken.
