Serves: 4 as a main, or 6 as a side
Prep and Cook: 15 – 20 mins
Ingredients:
- 250g-300g courgettes
- 200g carrots
- 100g kale (about 8 stalks)
- onion (spring or white)
- a handful of parsley
- olives (optional)
- roasted sunflower seeds (optional)
For the dressing
- 10 tablespoons olive oil
- the juice of 1 lemon
- salt to taste
Method:
- Grate the courgettes and carrots. Squeeze out the water from the courgettes.
- Finely chop the kale and knead it with a bit of salt.
- Mix all the vegetables and olives and seeds if using.
- Mix well with the dressing.
- Serve on a bed of salad leaves.
This salad goes well with chicken.
