Makes 4 medium sized onions Prep and Cooking: 50 minutes
Ingredients:
- 4 onions
- 2 Potatoes
- 2 Carrots
- 6-8 Chard, Kale, or Spinach leaves
From the cupboard:
- cooking oil
- Paprika
- Cumin
- Turmeric
- Soy sauce
- Balsamic vinegar
Method:
- Preheat the over to 180 degrees C
- Using an apple corer and small sharp knife scoop out the onions. Leave 3 to 4 layers on the outside.
- Chop carrots and potatoes into small cubes. Stir fry with cooking oil and salt to taste. Add finely chopped spinach, chard or kale and keep stirring.
- Mix all the spices with soy sauce and a bit of balsamic vinegar. Rub the mixture into the scooped onions.
- Fill the onion halves with the potato mixture
- Bake until golden brown (about 20-30 minutes)
- Mix honey and balsamic vinegar together and pour over the baked onions. Put back in the oven for another 10 minutes
