Simple Spinach

250g spinach
Olive oil, extra virgin
2 cloves garlic, sliced
Salt to taste

Rinse spinach thoroughly, and remove excess moisture in a salad spinner.
Heat 2 tbsp olive oil in a large skillet or frying pan on a medium to high heat. Add the garlic and saute until the garlic is beginning to brown.
Add the spinach to the pan, turning it with spatualas to coat it in the oil and garlic. Cover and cook for 1 minute. Uncover, turn again, then cook for another minute.
Sprinkle with salt and serve.
