Quinoa Salad

Ingredients:

  • 100g-200g kale
  • 2 shallots or 4 spring onions
  • 3-4 medium-sized carrots
  • a large handful of parsley
  • 150g lightly roasted sunflower seeds
  • juice of 1 lemon

From the cupboard and the fridge:

  • 150g quinoa
  • 10 tablespoons of olive oil
  • 5 tablespoons of apple cider vinegar
  • 2-3 tablespoons soy sauce
  • salt to taste

Method:

  1. Place the quinoa in a pot of cold water (1:5), bring to the boil and cook until the germ separates from the seed (about 15 minutes).
  2. Meanwhile grate the carrots and finely chop the shallots and parsley.
  3. Chop the kale the way you like it and give it a bit of a squeeze with lemon and salt.
  4. Mix the veg, quinoa and sunflower seeds.
  5. For the dressing, mix the salt, olive oil, vinegar, soy sauce and lemon juice and whisk until creamy.
