Ingredients:
- 100g-200g kale
- 2 shallots or 4 spring onions
- 3-4 medium-sized carrots
- a large handful of parsley
- 150g lightly roasted sunflower seeds
- juice of 1 lemon
From the cupboard and the fridge:
- 150g quinoa
- 10 tablespoons of olive oil
- 5 tablespoons of apple cider vinegar
- 2-3 tablespoons soy sauce
- salt to taste
Method:
- Place the quinoa in a pot of cold water (1:5), bring to the boil and cook until the germ separates from the seed (about 15 minutes).
- Meanwhile grate the carrots and finely chop the shallots and parsley.
- Chop the kale the way you like it and give it a bit of a squeeze with lemon and salt.
- Mix the veg, quinoa and sunflower seeds.
- For the dressing, mix the salt, olive oil, vinegar, soy sauce and lemon juice and whisk until creamy.
