Makes: 8-10 medium sized croquettes Prep and Cooking: 60 mins
Ingredients:
- 1 kg potatoes
- 200g peppers
- 100g kale (chard or spinach are suitable replacements)
- 1 onion (red or white)
- Handful of parsley
- Handful of dill (optional)
- Cucumber (optional)
- 6-7 garlic cloves
From the cupboard:
- 1 egg
- Breadcrumbs
- Salt to taste
- ½ teaspoon paprika
- 1 teaspoon oregano
- Greek style natural yogurt (optional)
Method:
- Steam the potatoes. Leave them whole with the skin on to prevent the croquette mixture becoming too liquid.
- Meanwhile chop in small cubes the peppers, mince the onions and kale
- Stir fry the veg until soft. Season with salt and paprika
- Peal the steamed potatoes, season with salt and oregano and mash.
- Add the egg, veg stir fry, minced parsley and 3 cloves of crushed garlic. Mix well with the mashed potatoes.
- Grease a baking tray. Form your croquettes into your prefered size. If you wet your hands it will prevent the mixture from sticking. Roll into the breadcrumbs and place into the tray.
- Bake until golden brown
Serve with greek style natural yogurt dip. Mix the yogurt with dill, grated cucumbers and crushed garlic
