Marinated Celery Salad with Beans














This crunchy salad would go well as part of a mezze spread or would be good for a picnic. As you can see in the photo I served mine with some lemony roasted root veg.
  • Half a head of celery
  • Large handful of soft herbs – oregano, thyme, parsley and / or tarragon

From the cupboard:

  • 2 tbsps natural yoghurt
  • 1 tbsp cider or white wine vinegar
  • 2 tbsp of olive oil
  • 1 tbsp whole grain mustard
  • 1 tin of cannellini┬ábeans


  1. Mix your dressing ingredients – the yoghurt, olive oil, mustard and vinegar. Season generously with salt and pepper.
  2. Finely slice the celery and combine with with the dressing. Leave to marinate for at least an hour.
  3. Mix in the beans and the fresh herbs when you are ready to serve. Check the seasoning and add more vinegar or yoghurt to taste.
