Prep & cooking: 10 min
Ingredients:
- 200 – 300g Kale
- Squeeze of lemon juice
From the cupboard:
- 30g flaked almonds
- Small knob of butter
Method:
- Boil the kale in plenty of salted water for 3-4 minutes until tender
- Drain and shake off excess water
- Meanwhile, heat a frying pan over a medium heat. Melt the butter and add the almonds. Cook the almonds for 2-4 minutes until golden brown. Stir regularly and keep a close eye on the nuts as they will burn quickly. Season with salt and remove from the pan when they are ready.
- Toss the kale with a little lemon juice and salt. Top with the buttery almonds!
