Green Lentil Curry with Mooli & Potatoes

Serves: 4
Prep & Cooking: 45 – 50 minutes

Ingredients:

  • 1 onion or leek
  • 1 carrot
  • 300g mooli
  • 150g celeriac or 3-4 stalks celery
  • 2 large potatoes
  • fresh garlic (wild garlic)
  • handful of fresh parsley (optional)

From the cupboard:

  • 150-200g green lentils
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon paprika
  • cooking oil
  • salt to taste

Method:

  1. Grate the mooli, carrot and celeriac. Finely cube the onions and potatoes.
  2. Stir-fry all the veg for about 5-10 mins. Add the lentils and keep stirring.
  3. Add the spices and keep stirring for 2-3 mins.
  4. Add boiling water (about 1 litre) and leave to simmer until the lentils are cooked (this depends on whether you prefer them firmer or softer).
  5. Add chopped garlic and finely chopped parsley.
