Prep & Cooking: 45 – 50 minutes
Ingredients:
- 1 onion or leek
- 1 carrot
- 300g mooli
- 150g celeriac or 3-4 stalks celery
- 2 large potatoes
- fresh garlic (wild garlic)
- handful of fresh parsley (optional)
From the cupboard:
- 150-200g green lentils
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1 teaspoon paprika
- cooking oil
- salt to taste
Method:
- Grate the mooli, carrot and celeriac. Finely cube the onions and potatoes.
- Stir-fry all the veg for about 5-10 mins. Add the lentils and keep stirring.
- Add the spices and keep stirring for 2-3 mins.
- Add boiling water (about 1 litre) and leave to simmer until the lentils are cooked (this depends on whether you prefer them firmer or softer).
- Add chopped garlic and finely chopped parsley.
