French Beans Salad with Parsley Pesto and Turmeric Rice

Serves 2            Prep and Cooking: 30 min


  • 200g steamed french beans
  • 1 medium size white or red onion
  • 100g parsley
  • 5-6 cloves garlic

From the cupboard

  • 100g brown or white basmati rice
  • cooking oil
  • 8-10 tablespoons olive oil
  • 3-5 tablespoons cider vinegar
  • salt to taste
  • turmeric

Cooking the rice

Fry the finely chopped onion with the rice for 5-10 min. Add the turmeric and stir for a minute or so. Put boiling water (1 cup rice to 3-4 cups of water) and leave to simmer until the water disappears.

The pesto

Use a mortar or food processor. Chop the parsley and garlic into the mortar. Add some salt and mash. Add the olive oil and vinegar and keep mashing until it gets creamy. If you want the pesto more liquid you can keep adding olive oil and vinegar until you reach the desired consistency.

Serve the pesto as a dip or mix the beans with it.
