Makes: 4 bowls approx Preparation: 20 min
Ingredients:
- 1 cucumber
- 3 spring onions
- 2-3 potatoes
- 4-5 radishes
- Handful of dill
From the cupboard:
- 2 tablespoons olive oil
- 3 eggs
- 500g natural yogurt
- Salt to taste
- Kefir (optional)
Method:
- Peel the potatoes and cut into cubes. Steam until ready
- Put the eggs into a cooking pot with cold water. Bring to boil and cook for 6-7 minutes. Remove from the stove and rinse with cold water
- Dice the cucumber into small cubes or grate, chop finely the onions and radishes, chop the eggs. Mix everything with the steamed potatoes. Season with salt.
- Dilute the yogurt with 500g of water. If you prefer your soup thicker reduce the amount of water. You can dilute the yogurt with kefir or cold chicken broth.
- Add the veg into the yogurt mixture, add the dill and leave in the fridge to cool down
