Ingredients:
- 250g Brussel sprouts
- 2 carrots
- 1 apple
- Handful of raisins
- Handful of parsley or coriander
- Lemon juice
- 2-3 cloves of garlic
From the cupboard:
- 7 tablespoons mayo
- 4 tablespoons natural yogurt
- Salt to taste
- Sunflower seeds, Pumpkin seeds or Almonds flakes (optional)
Method:
- Grate the Brussels, carrots and apple. Mix with the raisins.
- In a separate bowl mix the mayo, yogurt, lemon juice and crushed garlic
- Add the dressing to the grated fruit and veg. Mix well
- Sprinkle with fresh parsley or coriander, as well as seeds or nuts
