A simple mixture of beetroot, onion and porridge oats makes an easy pie filling, perfect for Sunday lunch or also picnics. Watch this video if you have never plaited pastry before – its easy & looks impressive!
Serves: 3-4
Ingredients:
- 1 onion
- 300g beetroot – peeled and grated
- 2 garlic cloves
- 2 tbsp fresh herbs (I used parsley and rosemary)
From the cupboard:
- 80g porridge oats
- 1 egg
- 320g pack of puff pastry
- 1tsp of Paprika, cumin seeds and fennel seeds (or other spices as desired)
Method:
- Preheat the oven to 180 degrees C
- Dice the onion and gently fry in olive oil until soft and translucent
- Meanwhile grate the beetroot
- When the onion is cooked, stir in the spices and cook for another minute. Mix together the onions with the grated beetroot, fresh herbs, porridge oats, the egg, the garlic (crushed). Use your hands to combine it all into a bright pink “sausage” mixture!
- Roll out the pastry into a rectangle
- Arrange the beetroot filling along the centre of the pastry rectangle. Cut away from the filling to the edge of the pastry to create flaps which you can fold over to form a plaited sausage roll.
- Bake for 30-40 min until golden and crisp
- Leave to cool slightly while you cook some greenery to serve alongside
