Balsamic Roasted Purple Sprouting Broccoli

Feeds: 4 as main 6 as side             Prep and Cooking: 20 mins


  • 300g purple sprouting broccoli
  • 2 garlic cloves

From the cupboard:

  • 2 tablespoons balsamic vinegar
  • 1 tablespoon olive oil
  • Sea salt
  • ½ teaspoon ground black pepper
  • 50g pine nuts or walnuts


  1. Heat your oven to 180 C.
  2. Trim all the woody ends. Cut any thicker stalks into half and place in a baking tray
  3. Crush or grate the garlic and whisk with the vinegar, olive oil and the seasoning
  4. Pour the dressing over the broccoli and toss to mix well.
  5. Sprinkle with nuts and roast for about 15 minutes
  6. Before you serve drizzle over any balsamic dressing left in the baking tray
