A simple and light recipe for using your courgettes. We’ve suggested using either feta cheese or parmesan, depending on what you prefer and what’s in your fridge. Serves 2.
Ingredients
2 medium courgettes
2-4 spring onions, finely chopped
2 tbsp self-raising flour
25g parmesan or 150g feta cheese
1 tbsp olive oil
Optional extras
170g tub roasted red pepper houmous,
to serve
1 small bunch fresh basil
1 teaspoon paprika
salt and pepper
Prep time: 10 mins. Cook time: 5 mins.
1. Coarsely grate the courgettes into a bowl, and add the flour and finely grated parmesan or crumbled feta cheese. If you are using any of the optional extras, add these into the bowl and mix together. Shape into walnut-size balls, then
flatten.
2. Heat a non-stick frying pan over a medium heat and add the oil. Fry the fritters for 2-3 mins on each side until golden brown. Serve straight away with red pepper houmous.
