Ann’s Kale and Mushroom Slow Stirfry

 

Here is Ann, one of our regular packing volunteers! She loves experimenting with new ways to cook with seasonal veg. Here is her quick and easy kale and mushroom stir fry. A classic combination to die for!

serves 2-4

takes 15-20 minutes including prep and cooking

Ingredients:

  • 1 Onion – red or any
  • 4 or 5 medium kale leaves
  • 250g Mushrooms
  • 1 clove garlic
  • Parsley – generous handful

From the cupboard:

  • Cooking oil
  • black pepper
  • salt
  • cumin

Method:

  1. Roughly chop onion and fry til soft in cooking oil over gentle heat.
  2. Remove stalks from kale, chop and soften along with onion
  3. Chop kale leaves and slice Mushrooms and add both to mixture
  4. Season if required
  5. Before serving add grated or chopped garlic and roughly chopped parsley – stir until warmed through
