Prep and Cooking: 45 mins
Ingredients:
- 8 large pak choi leaves
- 1 medium size onion
- 1 carrot
- 100g mushrooms
- Handful of Parsley (optional)
From the cupboard:
- 3 tablespoons quinoa
- cooking oil
- salt to taste
- ½ teaspoon black pepper
- Soy sauce
Method:
- Remove the stalks from the pak choi leaves and and mince them
- Chop finely all the veg and stir fry together with the minced pak choi stalks
- Season with black pepper and soy sauce
- Boil the quinoa and mix with the stir fried veg
- Blanch the pak choi leaves for couple of seconds each and place in cold water
- Make parcels with the pak choi leaves and the stuffing.
- Place in a baking tin with one inch of water and bake until the leaves are slightly golden
You can serve with natural yoghurt, hummus or on it own.Wonderful cold or warm.
