Why not add this week’s parsley to your weekend brunch. Cut off any of the harder stems & slice thinly, then wilt with all the parsley by either steaming over water for 5 minutes, or fry in a pan with a little water for 3-4 minutes. Under a poached egg or mixed in with scrambled, lightly cooked parsley makes a green to rival any other!
