Veg Shed Soup with Carrots, Spring onions and Coriander

Makes: 4 bowls                              Prep & cooking: 30- 40 min


  • 1 large onion
  • 500-600g carrots
  • 3-4 stalks celery
  • 150-200g of spring onions or the white bit of a leek
  • 2-3 cloves of garlic
  • Handful of coriander
  • Half lemon (juice)

From the cupboard: 

  • Cooking oil
  • Salt to taste


  1. Chop the onions and celery, slice the carrots and stir fry in cooking pot with cooking oil for about 10 min.
  2. Season with salt and add boiling water to the mixture. Cook for 15-20 min
  3. Mince the spring onions and mince the garlic and coriander
  4. Add them to the soup together with the lemon juice
