Sweet potato baskets with Kale and Mushrooms

Makes: 12 baskets                       Prep and Cooking: 30-40 minutes  


  • 3 medium sized sweet potatoes
  • 100-150g kale (or any leafy greens)
  • 200g mushrooms

From the cupboard:

  • cooking oil
  • Paprika
  • Rosemary
  • Dried garlic
  • Soy sauce


  1. Slice thinly the sweet potatoes. Place in a bowl and season with salt,  paprika, rosemary and dried garlic. Add a bit of cooking oil and mix.
  2. Place the slices in a muffin tin arranging them in a fanlike shape. Don’t forget to grease the tin.
  3. Bake for about 30-40 minutes (until golden brown)
  4. Meanwhile chop the kale and mushrooms and stir fry with a bit of soy sauce.
  5. When the baskets are ready fill them with a spoon full of the kale and mushrooms mixture.
