Potato Nests with Broad Bean & Parsley Stuffing

Makes 2 large nests. Prep & Cooking Time: 45 minutes

Ingredients:

  • 500g potatoes
  • 100-120g shelled broad beans
  • 30g fresh parsley
  • 3-4 cloves garlic
  • 2 small spring shallots or spring onions

From the cupboard:

  • 1 egg
  • ½ tablespoon oregano
  • salt to taste
  • cooking oil for greasing
  • cheddar for sprinkling

Method:

  1. Peel the potatoes and chop into larger cubes. Steam until tender.
  2. Steam the broad beans.
  3. Whizz the garlic, parsley and broad beans in a food processor, or alternatively use a pestle and mortar for the beans and finely chop everything else.
  4. Roughly mash the steamed potatoes and mix with finely chopped shallots, oregano and salt. Wait for the mixture to cool down a bit and add the egg.
  5. Preheat the oven to 180°C. Grease the baking tray and your hands so you can form the nests. First form a ball and place into the baking tray. Make a hole in the middle for the stuffing.
  6. Bake for about 15 mins. Turn the oven off and sprinkle with cheddar. Keep the tray in the oven until the cheddar melts.
