Pak Choi with Poached Egg & Tofu

You can also use pork loin for this recipe instead of tofu.

Serves 4
Prep & Cooking: 40-45 minutes

Ingredients:

  • 1 large onion, chopped
  • 200g-300g pak choi, roughly chopped
  • 3 cloves of garlic, crushed
  • 1 inch piece of ginger, roughly diced

From the cupboard:

  • 4 eggs
  • 400g tofu (or 1 tenderloin pork fillet)
  • 50g sesame seeds
  • 2-3 tablespoons sherry
  • 2 tablespoons light soy sauce

Method:

  1. If you are using pork for this recipe start with browning the loin in some light cooking oil.
  2. Dice the onion, ginger and garlic. Add sesame seeds to toast then add your chopped ingredients and cover with a lid.
  3. If you are using silken tofu instead of pork make 4 slices and add it to the pan. It is very delicate. Hollow out the middle and crack an egg into each space.
  4. Clean and chop your pak choi and add it to the same pan with 2-3 tablespoons sherry and 2 tablespoons of light soy sauce. Replace lid and cook until egg is ready.
  5. If you’re cooking pork give it 7-10 minutes. Remove the loin and slice it into medallions. If the pork is still pink scatter the medallions on top, cover and continue until cooked
  6. Serve with boiled or steamed rice.
