You can also use pork loin for this recipe instead of tofu.

Prep & Cooking: 40-45 minutes
Ingredients:
- 1 large onion, chopped
- 200g-300g pak choi, roughly chopped
- 3 cloves of garlic, crushed
- 1 inch piece of ginger, roughly diced
From the cupboard:
- 4 eggs
- 400g tofu (or 1 tenderloin pork fillet)
- 50g sesame seeds
- 2-3 tablespoons sherry
- 2 tablespoons light soy sauce
Method:
- If you are using pork for this recipe start with browning the loin in some light cooking oil.
- Dice the onion, ginger and garlic. Add sesame seeds to toast then add your chopped ingredients and cover with a lid.
- If you are using silken tofu instead of pork make 4 slices and add it to the pan. It is very delicate. Hollow out the middle and crack an egg into each space.
- Clean and chop your pak choi and add it to the same pan with 2-3 tablespoons sherry and 2 tablespoons of light soy sauce. Replace lid and cook until egg is ready.
- If you’re cooking pork give it 7-10 minutes. Remove the loin and slice it into medallions. If the pork is still pink scatter the medallions on top, cover and continue until cooked
- Serve with boiled or steamed rice.
