Kale with Buttered Almonds


Prep & cooking: 10 min


  • 200 – 300g Kale
  • Squeeze of lemon juice

From the cupboard: 

  • 30g flaked almonds
  • Small knob of butter


  1. Boil the kale in plenty of salted water for 3-4 minutes until tender
  2. Drain and shake off excess water
  3. Meanwhile, heat a frying pan over a medium heat. Melt the butter and add the almonds. Cook the almonds for 2-4 minutes until golden brown. Stir regularly and keep a close eye on the nuts as they will burn quickly. Season with salt and remove from the pan when they are ready. 
  4. Toss the kale with a little lemon juice and salt. Top with the buttery almonds!
