Cucumber and Lemon Cake with Elderflower Icing


I was extremely excited to stumble across Veggie Desserts last week – a recipe blog dedicated solely to using vegetables in delightful desserts, mouth-watering muffins and delectable drinks. Armed with our farm’s fresh cucumbers, I teamed up with friend and founder of Happy Loves Food to create this Cucumber and Lemon Cake for a friend’s birthday.

We doubled the recipe to make a staggered, three-tiered version and decorated with heart shaped cucumber cut-outs. It was unusual and utterly delicious – the cucumber creates a pleasing freshness which is wonderfully complemented by the subtle sweetness of the elderflower in the icing. I thoroughly recommend trying it at home, along with anything else you can find on Kate’s Veggie Desserts blog.
