Courgette & Parsley “Bombs”

Makes 10. Prep & Cooking Time: 45 minutes

Ingredients:

  • 600g courgettes
  • 50g parsley
  • 2-3 cloves garlic
  • 3-4 spring shallots
  • handful of dill (optional)

From the cupboard:

  • 1 egg
  • 4 tablespoons flour (gram flour preferably)
  • salt to taste
  • cooking oil for greasing

Method:

  1. Grate the courgettes and mix with salt. Leave them to drain in a sieve for about 15 mins.
  2. Squeeze the water out of the courgettes as much as possible.
  3. Finely chop the parsley, spring shallots and mix in a bowl together with squeezed courgettes, egg and flour.
  4. Grease a baking tray and form balls.
  5. Bake for about 30 mins. 

Serve with natural yoghurt (optional).
