Cold Summer Soup (Russian style) Okroshka

Makes: 4 bowls approx                  Preparation: 20 min

Ingredients:

  • 1 cucumber
  • 3 spring onions
  • 2-3 potatoes
  • 4-5 radishes
  • Handful of dill

From the cupboard:

  • 2 tablespoons olive oil
  • 3 eggs
  • 500g natural yogurt
  • Salt to taste
  • Kefir (optional)

Method:

  1. Peel the potatoes and cut into cubes. Steam until ready
  2. Put the eggs into a cooking pot with cold water. Bring to boil and cook for 6-7 minutes. Remove from the stove and rinse with cold water
  3. Dice the cucumber into small cubes or grate, chop finely  the onions and radishes, chop the eggs. Mix everything with the steamed potatoes. Season with salt.
  4. Dilute the yogurt with 500g of water. If you prefer your soup thicker reduce the amount of water. You can dilute the yogurt with kefir or cold chicken broth.
  5. Add the veg into the yogurt mixture, add the dill and leave in the fridge to cool down
