Baked Squash with Nuts and Cinnamon

Ingredients:

  • 1 squash (800g)

From the cupboard and the fridge:

  • 50g sugar or honey
  • 10-15g nuts (almonds, walnuts or hazelnuts)

Method:

  1. Quarter the squash and scoop out the pulp.
  2. Place the pieces in a tin covered with baking paper and sprinkle generously with sugar or honey (leave some sugar to sprinkle at the end).
  3. Bake for 30 mins at 180°C.
  4. Crush the nuts in a mortar and place inside the wedges. Bake for another 15 mins.
  5. Remove from the oven and sprinkle with a bit of sugar and cinnamon.

Can be served by itself or with a scoop of ice-cream.
