Doug’s baked aubergine slices

Our loyal customer and supporter Doug shared with us this recipe. It’s an easy way to cook aubergine and the results can be tailored to suit you. The thinner the slices and the longer they cook for – the crispier they’ll be.

Ingredients:

  • Aubergines

From the cupboard:

  • olive oil
  • maple syrup
  • lemon juice
  • smoked garlic powder
  • big shake of mixed herbs

Method:

  • Cut the aubergine into very thin slices and arrange on baking sheets lined with baking parchment. Brush the slices with a little olive oil and place into an oven preheated to 170 (fan assisted) for about 10 minutes.
  • While the aubergine starts to cook – mix up a dressing. I used olive oil, maple syrup, lemon juice, smoked garlic powder and mixed herbs.
  • After 10 minutes take the aubergine out of the oven and brush on your seasoning. Return the baking trays to the oven and cook until the slices reach the consistency you want. This takes me anywhere from 5 to 15 minutes depending on how crispy I want the slices to be when finished.
  • Remove from the oven and eat as a snack or as a side dish, or as part of a salad, which is what I did this time.
