Makes: 4 bowls Prep & cooking: 30- 40 min
Ingredients:
- 1 large onion
- 500-600g carrots
- 3-4 stalks celery
- 150-200g of spring onions or the white bit of a leek
- 2-3 cloves of garlic
- Handful of coriander
- Half lemon (juice)
From the cupboard:
- Cooking oil
- Salt to taste
Method:
- Chop the onions and celery, slice the carrots and stir fry in cooking pot with cooking oil for about 10 min.
- Season with salt and add boiling water to the mixture. Cook for 15-20 min
- Mince the spring onions and mince the garlic and coriander
- Add them to the soup together with the lemon juice
