Anna’s sweetcorn and courgette fritters

Meet Anna, a keen packing volunteer. Passionate about cooking, Anna attended our first cooking workshop at the farm and come up with this delicious and very easy recipe. Love it!

Makes: 6-7 fritters

Ingredients:

  • 1 corn cob ( corn stripped ) or a small can of sweetcorn
  • 1 medium/large courgette coarsely grated
  • 1 medium size chilli finely chopped
  • 1 medium onion finely chopped and cooked until translucent
  • A handful of  parsley, finely chopped

From the cupboard:

  • Salt and pepper
  • One egg
  • Cup of breadcrumbs

Method:

Mix all the ingredients and fry in oil in frying pan on moderate heat until golden brown all over
