Mooli salad with carrots, raisins and apples

Serves: 2-3

Prep: 10-15 min

Ingredients:

  • 200-250g mooli
  • 200-250g carrots
  • 1-2 medium sized apples
  • 2 handfuls of raisins
  • juice from 1 lemon (for the dressing)
  • Handful of parsley

From the cupboard for the dressing

  • Olive oil
  • Salt

Method:

  1. Soak the raisins in warm water. You can also soak in half water, half brandy mixture.
  2. Clean and wash the mooli and carrots with veg brush. Mooli doesn’t need peeling. Grate them and mix with salt. If you leave it for couple of hours the mooli will release its juices. You can mix it in the olive oil and lemon dressing.
  3. Cube the apples, chop the parsley and strain the raisins then add all to the grated mooli and carrots.
