Pavlina created this recipe and we served it at the Carshalton Environment Fair – it was our most popular salad. Sorry we didn’t snap a photo! Here’s the recipe:
Ingredients:
- 1 big beetroot
- 1 white onion
- 2 carrots
- 2 sticks celery
- 1 bunch spring onion
- A handful of Parsley
From the cupboard:
- 150g brown basmati rice
- cooking oil
- 100g walnuts
- 100g cheddar cheese
- 10 tablespoons olive oil
- 5 tablespoons cider vinegar
- 2-3 tablespoons soy sauce
- salt to taste
Cooking the rice – fry the finely chopped white onion with the rice for 5-10 min. Put boiling water (1 cup rice to 3 4 cups of water) and leave to simmer until the water disappear.
Chop the spring onions, celery and parsley, grate the beetroot and carrot. Mix with the cooked rice
The dressing – Whisk the olive oil, vinegar, salt and soy sauce until creamy and mix well with the salad
Cut the cheddar on small cubes and crush the walnuts. Sprinkle on the top of the salad
