Pak Choi Balls with Rice and Feta


Serves: 4
Prep & Cooking: 40 minutes

Ingredients:

  • 300g pak choi or spinach (or a mix of both)
  • 1 small leek
  • 1 large carrot
  • handful of parsley

From the cupboard:

  • 100g rice (brown or white)
  • 100g feta cheese
  • 1 egg
  • ½ teaspoon paprika
  • ½ teaspoon dried garlic
  • ½ teaspoon dried thyme
  • soy sauce
  • cooking oil
  • salt to taste

Method:

  1. Stir-fry the finely chopped leeks, pak choi and grated carrot for about 10 mins. Add the spices and parsley at the end.
  2. Boil the rice.
  3. Mix the rice, stir-fried veg, feta cheese and egg together.
  4. Preheat the oven to 180°C and grease a baking tin well.
  5. Form balls from the mixture and place them on the tray. It will be easier if you moisten your hands with water before making each ball. Conversely, if the mixture is too moist, add a bit of flour to form the balls easily.
  6. Bake for 20 mins.

Serve with yoghurt, garlic and dill dip.
